Qualifications
• Proven experience as a Sushi Chef or Sushi Cook in a restaurant setting.
• Strong knowledge of Japanese cuisine, sushi preparation techniques, and knife skills.
• Ability to work quickly and accurately under pressure.
• Understanding of food safety, sanitation, and proper fish-handling techniques.
• Ability to stand for long periods and work in a high-volume environment.
• Strong teamwork, communication skills, and a positive attitude.
Responsibilities
• Prepare all types of sushi, including nigiri, sashimi, maki, specialty rolls, and omakase-style dishes.
• Ensure proper preparation, storage, and handling of fish and other ingredients in compliance with health and safety standards.
• Maintain a clean, organized, and sanitized sushi station at all times.
• Monitor inventory levels of fish, produce, and sushi supplies; communicate needs to management.
• Assist with receiving, inspecting, and storing fresh fish and produce.
• Ensure consistency in taste, portion size, quality, and presentation of all dishes.
• Develop and introduce new sushi dishes or specials when requested by management.
• Collaborate with kitchen staff and front-of-house team to ensure smooth service.
• Follow all company policies, procedures, and food safety guidelines (HACCP).
• Provide excellent customer service when interacting directly with guests at the sushi bar (if applicable).
